  1. Microwave potato chunks (or use the steamer/pressure cooker) for 3½ to 4½ minutes. Once done, let potatoes cool to room temperature.
  2. Place the butter, olive oil, and the optional rosemary, thyme, and garlic into a large skillet over medium-high heat. Cook until the butter melts. The olive oil should heat through. Once the herbs begin to sizzle and pop, remove them and the garlic clove. Discard them.
  3. Line the potatoes evenly on the skillet and sprinkle seasonings generously. Toss to ensure even mixing.

  • 3 medium-sized russet potatoes

  • 2 Cups of butter, ghee, or olive oil

  6. Now, flip the potatoes (without stirring) to cook the other side and season with salt again. If needed add more oil to ensure that potato slices don’t stick to the pan.
  7. Serve when both sides are nicely brown.

Tip: You can use regular salt with pepper and paprika instead of seasoned salt.
