  1. One quart of full-fat coconut milk
  2. 1/4 cup of maple syrup. (Avoid honey as its bacteria might interfere with the yogurt culture)
  3. 3 tablespoons of plain active Yogurt or probiotics (probiotics are a vegan substitute for Yogurt in baking)
  4. 1-2 tablespoon unflavored grass-fed beef gelatin for thickening (optional)


  1. First, pour the full-fat coconut milk along with maple syrup in an instant pot and mix them well. Select the yogurt function and adjust the setting to boil. During this process, there is no need to put the lid on the instant pot.
  2. When the machine indicates completion of the process, let the milk cool to the temperature around 110- 112 degrees Fahrenheit.
  3. When the milk reaches the desired temperature (usually in an hour), take out a small amount of it in a cup. Add probiotics or plain yogurt to it and whisk well until it becomes smooth.   1. Pre-soak the almonds overnight. Remove the water and put them in a blender with water until they are smooth.
  2. Place a milk bag over the jar and put the almond water through it to get the almond milk. You will get around 2 and a half cups of it.

Preparation of almond milk vegan yogurt:

  1. Properly mix Xantham gum, agar-agar, and locust bean gum along with the almond milk in a saucepan. You can add maple syrup if you want it to be sweet. Heat it precisely to 185 degrees Fahrenheit while stirring and immediately move it to another pot. If the temperature exceeds, it might kill the cultures.
  2. Once it is cooled, add the yogurt starter and put the mixture in the yogurt maker. You can also select the yogurt setting.
